Why this matters
If I could make one piece of kitchen gear mandatory, an instant-read thermometer would be near the top. It does something almost no expensive pan or knife can do: it tells you when the food is actually done.
Stop cutting into chicken to see if it's cooked. Stop poking a steak and pretending your fingertip can distinguish 128 degrees from 138. Stop cooking pork until you're absolutely certain you've removed every remaining ounce of moisture. Temperature takes the guessing out of it.
I would rather own a good thermometer than another pan. And once you get used to cooking by temperature, you start using it for more than grilling — bread, frying oil, reheating leftovers, checking different parts of a roast. It becomes one of those tools you reach for without thinking.
So why spend more?
